Holy Guacamole!

I wanted to include my recipe for homemade guacamole that I put into my Mexican 7-Layer Dip.  In the past, I used store-bought.  I even have been known to use guacamole dip for that second layer.  However, when my BFF Dana made me her recipe for guacamole, I was hooked forever!

Let me tell you a bit about Dana.  We met over 25 years ago in a summer college prep class.  She thought I was a priss-pot.  I thought she was way too bossy.  Somehow, however, we connected.  That following semester in college, we survived Music Theory and Sight-Singing/Ear Training together (the latter was also known as Sight-Screaming and Ear Straining).  A few years later, I was a bridesmaid in her wedding; she was in mine. 


We've always had the kind of friendship that we don't have to be around each other all the time, but the "I'll be there for you-ooo" kind of friendship.  She's loyal and doesn't judge.  She's not afraid to tell me exactly what I need to hear or what she thinks, because I know she's only got my best interest at heart.  I know she'll always have my back & I have hers.  I can call her in the middle of the night with a crisis and she'll drop whatever she's doing to come to my aid.  True blue.  Yep, that's what she is.


We have the same taste when it comes to food.  If she tells me "Try this.  You'll love it!"  I always do. When she bragged on how good her guacamole recipe was, I told her to quit talking and make me some.  She did ~ the very next day, I might add ~ and that was the end of store-bought for me!  That all being said, here's my go-to recipe if I really crave the Guac.  It's awesome, just like my BFF Dana!


Dana's Awesome Guacamole


4 ripe avocados (peeled & mashed)

4 green onions, chopped
1/4 c. chopped cilantro
Lime juice
Kosher salt

Mash the avocados to desired consistency.  Mix in the green onions and cilantro.  Add lime juice & salt to taste.  To keep the guacamole from browning, reserve one of the pits & bury it in the guacamole.  I don't know why or how this works, but it does!


You can add in tomatoes and jalapeno peppers if you want a kick!  We both despise tomatoes in our guac, and find jalapenos to be a little too spicy.  Hey, we're spicy enough!
