No, not really. Just wasn't creative enough to come up with an exciting post title. However, today has been a productive day so far. I'm making progress on Mt. Washmore and have planned a simple, quick meal for my supper menu. (Recipe at the end of this post.)
Teenager has an ortho appointment, I have 2 piano lessons to give, and later, we're heading to the park for a picnic with our church family.
I really enjoy giving piano lessons. First of all, it's a great opportunity for me to be able to stay home and still contribute to the family finances. Secondly, I LOVE IT! I take great joy in teaching my students how to express themselves musically through the piano.
I teach a precious little 6 year old that is a joy! Her family had been on vacation last month, so we hadn't had lessons for a few weeks. I was thrilled when her mom told me how much her daughter had missed lessons. "I just love piano lessons," she told her mom that morning. Made my day!
I'm planning on making ham & Swiss Stromboli for supper tomorrow night (since we're going to be eating subs at the park tonight). I got this recipe from a friend when we were living in KS. You can adapt this recipe easily by switching out the meat & cheeses to your liking.
I've made it using roast beef & cheddar, turkey & Colby-Jack. You could do a club by adding turkey and cheddar, or even a BBQ chicken style with chicken, BBQ sauce, red onion & mozzarella. I want to try a Philly cheese steak style by adding sandwich steak, sauteed onion & peppers, plus provolone. Okay, I'm seriously salivating right now!
I usually make this using the refrigerated dough, but I have a wonderful recipe for a honey-wheat bread that I've used, too. DELICIOUS!

Ham & Swiss Stromboli
1 can Pillsbury French Bread
1 T Dijon mustard
1/2 lb. Deli-sliced Virginia brand ham
4 slices bacon, cooked & chopped
2 green onions, chopped fine
1 c. Swiss cheese, grated (If you want to be fancy, Gruyere is delicious!)
Oven 350*
Unroll French bread. Spread on mustard. Layer ham on dough, then sprinkle with bacon, onion & cheese. Re-roll dough. Place seam-side down on greased sheet pan. Cut 6-8 diagonal slits across to score the dough.
Bake for 30 minutes or until golden. Slice on the diagonals. We like to have a side salad with this, either veggies or fruit. Enjoy!
