I made these bars the other day ~ One of my Pinterest finds. The crust is a flaky shortbread, and the filling is a sweet, tangy cheesecake with blueberry goodness marbled inside. Enjoy!
Preheat oven to 400*
Crust:
1-1/2 c flour
1/3 c sugar
1/2 c (1 stick) softened butter
1 beaten egg yolk
Mix flour & sugar. Cut in butter & egg. Press into a 9x9 baking pan. Bake 25-30 minutes or until lightly browned. Remove from oven & cool completely. Turn oven down to 350*.
Cheesecake Filling:
8 oz. softened cream cheese
1/2 c sugar
1 T flour
2 eggs
1 t vanilla
Mix cream cheese & sugar. Stir in flour. Add eggs & vanilla, mix well. Pour over cooled crust and spread evenly.
Blueberry Filling: (I substituted a can of Blueberry pie filling here to save time.)
1 c blueberries
1 T cornstarch
4 t EACH of Orange Juice & Lemon Juice
2 t sugar
Place berries, cornstarch, juices & sugar in saucepan. Bring to a boil, reduce heat & stir until thickened.
Drop spoonfuls of blueberry mixture on top of cheesecake. Swirl by taking a knife and dragging it through the mixtures to incorporate.
Bake at 350* for 20-25 minutes or until firm. Cool completely, then refrigerate at least 3 hours. Enjoy!
