I love to cook. I love to bring food to church events and hear people exclaim how much they enjoyed my food. I've had the opportunity to cater a few events with my friend Dana ~ women's brunches, mainly ~ and the end results were positive. At one event, the plates were practically licked clean!
I've toyed with the idea for the past couple of years, but this is the year that I'm going to put my money (literally) where my mouth is. This Fall, I'm going to enroll in the culinary arts program at our local technical college. I'm super excited!
That being said, I'm going to begin a new post title for Mondays ~ Muffin Mondays. Each Monday, I will share recipes for some of my favorite muffins, both savory and sweet. Without further ado, here is one of my favorites ~ I just made them last week!
Make-Ahead Muffin Melts
Ingredients:
12 hard-boiled eggs, peeled & chopped
2 cups grated cheddar cheese
1 cup (real) mayonaise
12 slices bacon, fried and crumbled
1 Tablespoon (T) dijon mustard
1/2 teaspoons (t) garlic powder
3 dashes Worcestershire sauce
6 whole English muffins
Preparation Instructions:
Combine eggs with all other ingredients. Fold together gently. Cover & store in refrigerator overnight. Split & toast English muffin halves. Spread egg mixture on muffin halves. Broil 3-5 minutes until hot & bubbly. (Don't set them too close to the heating element ~ they burn easily.)
Serve immediately!
