Oh, how I love this coleslaw recipe! Once I saw Kelsey Nixon make this on her show, Kelsey's Essentials (featured on the Cooking Channel), I knew I had to have her recipe! Instead of the usual, mayo-loaded, slightly sweetened fare, this one tastes lighter and is wonderfully tangy!
I've made this savory coleslaw a couple of times to take to potlucks at church. My family loves it, and always requests that I save some so they can have it later. So far, I've never had any leftovers to bring home!
Kelsey's Coleslaw (From Kelsey's Essentials on the Cooking Channel)
Sauce:
1/2 c. sour cream
1/2 c. mayo
1/4 c. lemon juice
2 T olive oil
Veggies:
1/2 head Napa cabbage
1/2 head green cabbage
1/4 c. grated carrots
4 sliced green onions
Seasonings:
Kosher salt
Cracked black pepper
Make the sauce in a large bowl. toss lightly with the veggies. Season to taste. Once I've put this in a serving dish, I like to garnish it with a little more lemon juice, onions, salt, & pepper. I love to see those little black specks and a hint of dark green!
Cooking tip:
I try to make this the night before to let the flavors marry. This recipe is also easy to double to take to potlucks.
