Awesome Sausage Stars

When my friend Kailley made these little bites of heaven for a bridal shower, everyone asked for the recipe as they scarfed down these tasty treats!


Ingredients:


1 pkg. wonton wrappers

1/2 lb. each of sausage and hamburger, browned & drained
3 c. shredded cheddar-jack blend cheese
1/2 c. sliced black olives
1/2 c. red bell pepper, finely minced
1/3 c. green onions, finely chopped
1 c. Ranch dressing
1 t cracked black pepper

Directions:


Preheat oven to 350*.  Spray a 12-cup muffin tin liberally with cooking spray.  Gently place a wonton wrapper into each cup, forming a star shape.  Spray again 3 times with the cooking spray.  Bake for 7-8 minutes, or until golden brown.

Meanwhile, combine the meats, olives, peppers, onions, dressing and cheeses together in a mixing bowl.  Once the wonton cups are golden, fill with meat mixture and bake another 7-10 minutes or until cheese melts and the filling is bubbly.


*For an extra kick, use a mixture of cheddar & pepper jack for some zing!

Simply Stroganoff

I'm always trying to find a way to disguise leftovers, and thanks to an old family friend, I love to make her recipe to use up that leftover Sunday pot roast!  Thank you, Pasty Simmerman ~ a lady who's been enjoying heaven for over 13 years!  

Ingredients:

1/2 c. diced onion
1 clove minced garlic
1 T melted butter
1 lb. lean hamburger, browned & drained OR leftover pot roast
1 can cream of mushroom soup
1 can beef broth
1 c. sour cream
Kosher salt
Cracked black pepper
Season-All salt
1 T. chives

Noodles cooked according to pkg. directions

Saute onion and garlic in butter until translucent.  Add in meat of choice.  Drain any excess fat if using hamburger.  Add soup and broth to desired consistency.  (I use any remaining broth for part of the noodle cooking liquid.)  When ready to serve, stir in sour cream and seasonings to taste.  Serve over hot noodles.  A great side dish is steamed baby carrots.
